My Israeli Breakfast Salad

I found one similar on recipezaar and then came up with my own version. I love this salad for any time not just breakfast. It also does not need crackers or such to accompany it but is great on flatbread or in a pita too.

Ingredients

  • 3/4 cup cubed or crumbled feta cheese
  • 3/4 cup drained cottage cheese, it will dry
  • 10-15 large pitted kalamata olives
  • 10-15 green olives
  • 1 diced yellow bell pepper
  • 1 seedless English cucumber diced
  • 1 can garbanzo beans, drained
  • 2-3 diced green onion with some tops
  • 3 lemons
  • 3/4 cup olive oil
  • Black Pepper to taste

Directions

I strip only part of the skin off the cucumber and prefer cubed feta, it crumbles anyway. Mix all this together and eat. So simple. It gets better during the day too.
