Serve warm or cold. Very colorful.
Heat medium skillet over med-hi heat w/1
T oil.
Cook carrots & peppers about 5 minutes until tender-crisp.
In large bowl, toss pasta, spinach, parmesan, vinegar, salt, pepper,
oregano & 2 T olive oil w/cooked veggies.
Serve immediately. Leftovers are good cold.
Serves 4.
