Cinnamon Pancake Mix In A Jar

Ingredients

• 3 cups all purpose flour
• 2 tbs sugar
• 2 tbs baking powder
• 4 tsp cinnamon
• 1 1/4 tsp salt

Directions

Combine all ingredients and put in a quart jar, shake down if necessary. Store in a cool dry place for up to 6 months.
Attach the following directions to jar:
3/4 cup milk
1 egg
2 tbs oil
1 1/3 cup pancake mix
In a medium bowl combine milk, egg, and oil and mix with a wire whisk. Stir in the pancake mix just until moist but still a bit lumpy.
Cook on a lightly greased griddle or waffle iron.
Makes 1 dozen medium pancakes.
