Triple Chocolate Brownies

This is a good recipe but calls for a couple of things that may be hard to find. I tried to put in the instructions for the substitutes as needed.

Ingredients

  • 10oz plain chocolate (70% cocoa solids)
  • 10oz unsalted butter
  • 3 oz pecans, broken into pieces(optional)
  • 3oz milk chocolate, cut into large chunks
  • 3oz white chocolate, cut into large chunks
  • 6oz plain flour
  • 1 tsp baking powder
  • 4 large eggs, lightly beaten
  • 1 tsp vanilla
  • 12 oz caster sugar(This is a superfine sugar, Domino sells it in a box but you can make your own.)
  • Measure out the sugar and run it thru a food processor for a couple of minutes, till powdery.
  • Use the whole thing, but wait until the powder settles to open the processor.
  • You can also use Bakers sugar. Difference is that some recipes need a sugar that dissolves
  • fast and powdered sugar is not a good substitute.)

Directions

1. Preheat the oven to 325. Line a 12x8x1 1/2 pan with lightly buttered baking parchment paper or foil.
2. Put the plain chocolate and butter in a large bowl, place over a pan of simmering water and allow to melt (double boiler works great if you have one)
3.Sift the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla. Fold in the flour, nuts and other chocolate chunks.
4. Pour the chocolate mixture into the prepared pan. Place in the oven and bake for 20-25 minutes. The top should be firm but the inside should feel soft when it's cooked. Allow the brownies to cool. Remove it from the pan and cut into squares.
