No-Bake Cookies

One cookie recipe that I've been making since I was about 11 years old is this No-Bake Cookie one.
I rank it right up there with Chocolate Chip Cookies and Brownies
Hope you all enjoy these as much as my family (ALL of them) do.

Ingredients

1/2 cup butter or margarine
2 cups sugar (granulated)
1/2 cup milk
3 cups quick cooking oats
3 T (heaping) peanut butter (creamy or chunky)
1 t vanilla
1/4 t salt
6 T (heaping) hot chocolate mix (I use NesQuik)
1 bag flaked coconut (optional)
Mini marshmallows (as many as you like) (optional)

Directions

In a large saucepan, place butter, sugar, and milk; bring to a rolling boil, stirring constantly. Remove from heat. Stir in oats, salt, and vanilla. Blend well. Stir in peanut butter and hot chocolate mix. Drop by tablespoonfuls onto wax paper. Let set at least 30 minutes until cookies are set.
A variation on this is to add marshmallows (mini) to the mix at the end. This will make the cookies a bit gooey but they are also addicting and go great with milk or coffee
