One of the things I've missed
since I started eating low-carb is cookies.
These are really good! As far as I can tell, "almond flour" is
just almond
meal (finely ground almonds).
1. Preheat oven to 375*F. Beat butter
until smooth. Add egg and vanilla and blend as best you can. add the 1 C.
Splenda and almond flour.
2. Spoon heaping teaspoons on baking sheet. Press to 1/4-in. thickness.
Sprinkle with remaining Splenda. Bake 9 to 11 minutes or until lightly
browned.
