Almond Moon Cookies

Ingredients

  • 1 cups granulated sugar
  • 1 cup butter or margarine
  • 1 egg
  • 1 egg yolk
  • 1 tsp. almond extract
  • 2 cups all-purpose flour
  • 1 tsp. Baking powder
  • tsp. Salt
  • cup finely ground almonds
  • 1 egg white, beaten optional
  • Almonds sliced
  • Granulated sugar

Directions

1. Cream butter and sugar until fluffy.
Add the egg, and the yolk and almond extract. Beat well.
2. In another bowl, sift flour, baking powder and salt together.
Mix the ground almonds into flour mixture.
3. Add flour mixture to butter mixture
Mix until dough forms.
4. Divide the dough into two pieces. Shape each into a roll, about 2 inches in diameter.
5. Wrap each roll in waxed paper, twisting the ends.
Chill in the refrigerator for at least one hour.
6. When ready to bake slice the dough into inch rounds.
7. Cut the rounds in half.
Using your fingers, shape the half-circles into curved half moons.
8. Place on lightly greased cookie sheet.
Brush tops with egg white. Sprinkle with sliced almonds.
Bake at 350 F for 10 minutes.
9. Sprinkle with sugar when removed from the oven.
