ALMOND MACAROONS FOR PASSOVER

Ingredients

  • 2 cups almond meal -- (packed) about 1 1/2 cups raw almonds
  • 1/2 cup sucanat
  • 1 pinch salt
  • 1 lemon's lemon zest -- organic if possible ** or 1/2 teaspoon lemon
  • extract
  • 3 medium egg whites
  • 1 teaspoon almond extract

Directions

1. Preheat oven to 350 degrees F.
2. Combine first 4 ingredients. Mix well.
3. Beat egg whites with fork until lightly foamy. Add almond extract
to beaten egg whites and mix well.
4. Stir egg whites into almond flour mixture gradually to make a loose
dough. Stir well. Dough will thicken.
5. Drop dough by rounded teaspoonful about one inch in diameter onto a
parchment-lined baking sheet, flattening balls slightly.
6. Bake about 15 minutes or until tops seem dry and golden brown.
