This is one of our family favorites. I make this and wrap in cellophane to give to friends and neighbors for Christmas and other gifts. Everyone seems to love it.
Combine butter and sugar in pan and turn
on med high heat. Add cut almonds once the butter and sugar have formed
into a good consistency. Cook until it is a dark brown color. (10 min or
so). Stir constantly. Take some out with a fork and place in ice water for
a few seconds. Taste. If it is the desired chewiness/hardness, take off
heat. Add 1 tsp of vanilla and stir real well.
Pour onto greased pan and spread so it is not in a clump. After a few
minutes, spread milk choc on top and add ground almonds. Put in freezer
immediately or put somewhere to cool. (This will help it set faster. You
do not have to put in freezer though.)
I generally use a handful of the nuts when I put them in with the sugar
and butter. I am guessing at how much that is. Sometimes, I add a bit more
bc my family likes it really nutty.
This is one of those things you have to watch real well. It helps me if I
have all my pans ready first, (the ice water, greased pans, almonds ready
to pour and vanilla out) bc once the color starts it seems to go pretty
quick.
