This has a short cooking time, so you can't leave it all day, but it works well if you're going to be gone for a couple of hours and want a hot, easy meal when you get home.
1. Brown ground beef and green pepper in
skillet; drain. Add salsa.
2. Spread each tortilla with 1 tablespoon sour cream. Spoon 2 tablespoons
meat mixture on each tortilla and roll to secure filling. Place seam-side
down in crockpot.
3. Spoon remaining meat mixture over tortillas. Sprinkle with cheese
making sure tortillas are completely covered. Cover. Cook on LOW
1 1/2 to 2 hours or until heated through.
