Here's one of my favorites. You can substitute canned vegetables for fresh, if you wish. Just don't forget the tortilla chips!
Cook beef, onion, and garlic in a skillet; drain. Transfer to crock pot. Add remaining ingredients and cook on low for 8 hours. Serve with tortilla chips.
