Shepherd's Bread

This is for the bread machine. If you use all whole wheat flour, it will not rise as well.

Ingredients

  • For the Sponge:
  • 2/3 cup water
  • 1 cup unbleached bread flour
  • 1/4 tsp yeast
  • For the Dough:
  • 1/2 cup water
  • 1 TB sucanat (sugar)
  • 1 TB olive oil
  • 1 3/4 cups whole wheat flour
  • 1 1/4 cups unbleached bread flour
  • 1 TB gluten
  • 1 1/2 tsp salt
  • 1 1/2 tsp yeast

Directions

FOR THE SPONGE:
Mix ingredients in a bowl. Place in breadmachine. Let set for no less than 4 hours (helps give it a sourdough taste).
After the sponge is ready:
FOR THE DOUGH:
Place the dough ingredients in the machine on top of the sponge. Bake according to your breadmachine.
