In the winter this is a quick griddle bread but now that summer hit I just cooked it on the grill and it worked well. Easy and fast. This makes 8-10, 8-10 inch piadinas.
Mix all the dry ingredients together well, cut in the butter or shortening. Add the ice water. Mix well and cut in half and then half again. Cover with dough with cloth while you work with a piece. When rolling out use oil not flour on your surface. Form piadians 8-10 inches round by 1/4 inch and prick with a fork in several places.
Cook on a very hot griddle or open flame grill. These cook fast.
