This is how I fix it for a mid day or quick meal. The kids like it served with the veggies.
I place my tofu on a cutting board with the ridge for then put the block on it with another board on top. I place a large bowl of water on top for the pressure.
Then when pressed cut into squares 1/2". Stir fry in the oil and put to the side on a paper towel. At this point you can stir fry other veggies to serve with or with a sauce.
