These came out really nice and chewy. They freeze well.
Mix honey and peanut butter until well blended. (I warmed the honey and peanut butter for easier mixing) Stir in remaining ingredients. If mixture seems too dry, add water 1 TB at a time. If it is too sticky, add oats 1 TB at a time.
The mixture should not be so sticky that you can't spread it easily in a pan with greased fingers. Press into a 9 x 13 pan lightly greased.
Bake at 350 until barely browned, about 18 minutes.
Cut while warm into bars. When completely cool, remove from pan with a greased spatula. Allow to "season" on a cutting board until they can be picked up easily without falling apart. Wrap each bar in a small sandwich bag or plastic wrap and store in a ziploc.
(Mix-ins that I used were: raisins, unsweetened coconut, chocochips, crushed walnuts and sunflower seeds. Two kids love it, but asked that I do not use raisins next time. Two kids refuse to taste it.)
