Heat oil in large skillet. Skin chicken and brown over medium heat. Add onion and garlic and cook 2 minutes. Add all other ingredients except limes. Reduce heat, cover and cook until tender, about 20 - 25 minutes. Immediately before serving, add the juice of 2 limes, about 2 tablespoons. Heat through. Garnish with lime quarters and serve.
