This is one of my favorite dishes because from start to finish only takes about a half an hour.
Pound out chicken lightly to 1/8-inch
thickness. In bowl mix together flour, salt, and pepper. Lightly coat
chicken pieces with flour mixture.
In large skillet melt 1 tablespoon of butter and cook mushrooms and onions
until tender. Remove from the pan and set aside. Melt remaining butter and
add chicken to skillet. Cook chicken over medium heat until done about 4-5
minutes or longer if necessary. Return mushrooms and onions to skillet and
add chicken broth and Marsala. Cook uncovered 2 to 3 minutes or until
liquid in the pan starts to thicken. To serve, place chicken on a serving
dish and spoon onions and mushroom mixture over it.
