Salmon Patties

Ingredients

  • 1 can pink salmon
  • 3/4 Cup saltine crackers, crushed
  • 1/2 onion, finely diced
  • 1/2 stalk celery, finely diced
  • Salt, pepper, and parsley, to taste
  • 1 egg
  • 1-2 Tablespoon butter

Directions

Drain salmon well. Mix with crushed saltines, onion, celery, salt, pepper,
and parsley. Add egg and mix again. Shape into patties. Cover and
refrigerate for the day or overnight. Fry in butter until golden brown.
