Old Fashioned Spice Cake

Ingredients

• 1 cup sugar
• 1/2 cup butter
• 1 cup raisins, chopped
• 1 egg
• 2 tablespoons molasses
• 2 cups flour, sifted
• 1 tsp. baking soda
• 1 tsp. cinnamon
• 1/4 tsp. ground cloves
• 1/2 tsp. ground ginger
• 1/2 tsp. salt
• 1 cup milk
• 1 tsp. lemon extract

Directions

Preheat oven to 350 degrees F. Grease and flour a 9-inch round or square cake pan.
Cream sugar and butter. Mix in raisins and egg. Sift dry ingredients together and add alternately with the milk. Add the lemon extract and beat well. Pour batter into pan. Bake 35-40 minutes.
Serve plain or frost with your favorite icing.
