1950s ICE BOX CAKE

This is from the 1950s and is very, VERY rich.

Ingredients

  • 1 lb. package Vanilla Wafers*
  • 3 eggs beaten foamy**
  • 1/2 C. real butter
  • 1 1/2 C. sugar
  • 1 1/2 C. chopped nuts (pecans are all I have ever had in it)
  • 1 small can crushed pineapple

Directions

Cream the butter and sugar together until fluffy. Add
the eggs, pineapple and nuts. Mix well. Add fully crushed vanilla wafers. Place in a 9X11 pan and place in the refrigerator for 24 hours. This may be refrigerated for a shorter period of time but the longer, the better. Serve with whipped cream if desired.
* Like many other things, vanilla wafers no longer come in 1 lb. packages so be sure to buy two and make up the difference or it won't turn out right.
** Since raw eggs are no longer considered safe, use pasteurized eggs or an equal amount of the egg substitutes that are made from real eggs.
